This class will teach you how to cover and decorate 5 'Mini Cakes' using sugar paste and florist paste. We will be working with the classic colour scheme of cream and white to produce the elegant and pretty decorations pictured. Mini cakes are hugely popular for all types of occasions including Weddings, Birthdays or to give as an individual gift to someone.

On the day you will work with 5 generously sized (2.5 inch by 2.5 inch) rich all butter madeira cakes. You will be shown how to:

  • Level, butter cream and prepare your mini cakes
  • Cover them with sugar paste and learn the right thickness that you need to achieve a flawless finish
  • Work with florist paste and learn how to 'frill' your flowers to give a beautiful softer look to them
  • Make edible pearls
  • Hand-make delicate roses and learn how to make embossed butterflies
  • Work with lustre and satin dusts to give a beautiful sheen to your decorations
  • Attach your mini cakes to their own individual cake cards
  • Choose complementing ribbons to finish off your cakes and give them a truly professional look
  • Store them once made so you can make them ahead of time

You will go home with:

  • 5 gorgeous rich all butter madeira 'mini cakes' handmade and decorated by you
  • A copy of the 'Le Beau Cake' madeira cake recipe
  • Details of the equipment used and recommended stockists so you can put all you have learnt into practice
  • The knowledge and skills needed to be able to make lot's more mini cakes in any colours/ designs you choose

This class is suitable for intermediate level students. All of the equipment is provided for you, but please bring an apron, notebook and pen. Refreshments will be served. Please also bring your own lunch.

The class is held in Hertford, Hertfordshire from 11am to 4:30pm. Ample free parking is available. The nearest mainline train station is Hertford East. There will be a maximum of 5 people at each class.

Our classes owe part of their success to the small group sizes and our excellent references from happy customers and class participants. We kindly ask that you double-check your availability before booking a specific date. We are unable to offer a refund for cancellation of a class - we will however always endeavour to get you booked for another date. In the unlikely event that a class is cancelled by us, a full refund will be given.
